Funding agreed for new bespoke built dry ageing room on site. After a long and lengthy lunch with the bank, full funding was granted for a large ageing room to be built off site, beef will be brought in and aged before being transported across for processing. This will ensure we have a consistent supply of beef at the right specification many of our chefs are requesting.
