My corner this month takes a different turn, as I thought I would shine a light on 2 (amongst the many others) of the unsung heroes of ‘behind the scenes’ at Select Butchery, our Technical Department – Jack and James.

They take care of all the Health & Safety regulations (which as we all know …are endless) to include a full traceability process, the development and implementation of internal regulations for food safety systems & 3rd party accreditation…the list is endless.

This has all culminated in Select being awarded a BRC Grade A certification. The BRC (British Retailing Consortium) food safety standard began in the UK and is now the leading trade association for British retailing, and also recognised as a global standard benchmark.
