Urban Leisure Group were in for a treat this month when Dermot our Head Butcher stepped in to Heist Bank with one of our red pole hind quarters over his shoulder. The basement function room was turned into a butchery hall for the evening where Dermot demonstrated the breakdown into different cuts to his audience made up of the Urban Leisure personnel. It was a great evening and everyone got involved with cutting, mincing and trimming up the beast. Once Dermot had finished his part, it was the chefs that took control and turned some of the trimmings into some top quality burgers and steaks out of the rest for everyone to enjoy.
