I was born in South West Poland, a city called Bielsko-Biala. I moved to London in 2000 in search of adventures & new experiences.
I began my culinary journey in a beautiful restaurant called Le Mercury located in north London. I started as a kitchen porter & gradually worked my way up to the position of Head Chef over 6 long years.
As I progressed through my career I spent time with a small chain of a restaurants owned by Peter Illic called Little Bay, I helped open the first Vivat Bacchus which allowed me to spread my wings and broaden my knowledge and gave me an opportunity to work with the 2012 London Olympics, an experience that will stay with me for the rest of my life.
I then joined the famous Dans le Noir team in 2014, this was a whole new experience for me and I gradually worked my way up to Head Chef.
The Head Chef role brings new challenges every day. Our food is served by blind waiters in complete black out darkness so our clients are unable to see what is on their plates, therefore the taste has to give them the idea of the presentation. I have to think how I can add different flavours, textures and dimension to the plates so our customers will have a completely different and unique experience. This year we have won the British Restaurant Award 2017 for best culinary experience in UK which is a great credit to us.
My dream is to one day own my own Michelin star restaurant but I have to say I’m a very lucky guy already. I have an amazing family, a hobby as my job and I wouldn’t change it for the world…
