This month we fire up the Select butchery apprenticeship program! It’s clear that the skill we call butchery is a dying trade and we feel that our young employees, with a taste for meat and a willingness to learn, should be given the opportunity to progress within Select. Jacques is 22 years old and has been with us for just under a year. Currently his role is to assist the butchers with packing and keeping everything in order. He will be our first pupil to be mentored by George Bland, a veteran in the meat industry dating back to when Fairfax Meadow was formed. George started butchering from the age of 16 and now has over 50 yearsÂ’ experience. We will update you on Jacques journey throughout his apprenticeship. Good luck Jacques!
