A chilly Monday morning saw Elliott (Select’’s Operations Director) and Jack (Select’’s Technical Manager) head up the M1 to meet Peter Brereton & Jim Buchan of Dawn Meats. Peter & Jim had us suit up as we followed them into one of the most modern & technological boning halls we have ever seen. The company currently have a system of 3 lines turning a full side of beef into perfectly trimmed cuts within a minute. We were told around 2000 cattle are boned per week! The whole place was immaculate – every item received its own barcode for traceability and it was a pleasure to see everyone working to the highest of standards. A big thank you to everyone at Dawn for such a great visit. Even though Select have strict supply chain processes, it is always great to visit our suppliers!
